- Rum1 200 ml
- Lemon zest
- Orange zest
- Orange juice
- All-purpose flour

- Cinnamon powder 50gms
- Tooti fruity 250gms
- Butter 200gms
- Brown sugar 1/2tbsp
- Baking powder 100gms
- Almond powder 1tbsp
- Vanilla essence
- 4 eggs

How to Make a Christmas Plum Cake?
Starting with the process of making a plum cake. Put all the dry fruits in a pan, add rum to it and bring it to a boil. Cover it with a lid, keep it aside and let them soak in the rum throughout all night.
Next morning, sift all-purpose flour, baking powder, almond powder, clove powder, ginger powder and cinnamon powder together. In another bowl, beat in the eggs well and keep it aside. Now it’s time to cream butter, brown sugar, lemon & orange zests and vanilla essence. Now pour the egg mixture into it and give it a very good mix. Add the sifted flour to it. Finally, add the soaked fruits to it along with some orange juice and whisk well. Now transfer this to a greased baking cake pan. And bake in the preheated oven to 170 degrees for 50mins.
Now it’s time for giving it a finishing touch-up. Bring down the temperature of the cake and let it cool completely. Once the cake is cool, sprinkle some icing sugar over the cake and decorate it with Christmas toppings. That’s all, your plum cake is ready to enjoy!
Brown Sugar Cornmeal Plum Cake

- Plums
- All-purpose flour 1 1/2 cup
- Cornmeal 1/2 cup
- Baking powder 1tbsp
- Salt 1/4tbsp
- Cinnamon 1/2tbsp
- Unsalted butter 8tbsp
- Sugar 1/2 cup
- Brown sugar 1/2 cup
- 3 eggs
- Vanilla essence 1tbsp
- Buttermilk 1/2 cup
Instructions
First, slice the plums into wedges, sprinkle sugar, toss to coat and keep aside. In a bowl, sift all-purpose flour, cornmeal, baking powder, baking soda, salt and cinnamon to combine and set aside. In another mixing bowl beat the butter, sugar, brown sugar and vanilla essence until creamy and add eggs one at a time, mix to combine. Alternatively add the flour and buttermilk to this mixture, in two portions. Remember not to over-mix.
Spread half portion of the batter into the lined pan and arrange the plums in circles, around the pan. Dollop the remaining batter over the plums and bake for 60 minutes in a preheated oven to 350°. Cool the cake until it reaches room temperature and serves it with whipped cream.
