First of all, grind the ingredients for the paste(onions, ginger, garlic, fennel seeds, cumin seeds, peppercorns, red chillies & coconut). Next, marinate the chicken with the paste. Now chop some tomatoes, coriander leaves and onions to start. Heat oil in a pan and add cinnamon, cardamom, cloves and cumin. Sauté them till they are fried then add chopped onions and curry leaves to them, sauté until the onions are golden. After the onions turn golden, add in the tomatoes and sauté them for 5 minutes. Add in the marinated chicken & some turmeric powder. Sprinkle water at regular intervals & sauté it for 10 minutes. Finally add salt to taste, cover with a lid and cook until it is done. If required, you also can add some chillies or pepper to make it spicier. Serve the dish with some plain rice garnish with coriander leaves.
2.Andhra Style Chicken Curry
This is also referred to as Andhra Kodi Kura. This chicken recipe here is not any exception as Andhra cuisine is legendary for its fiery hot and spicy food. It’s an authentic Andhra recipe which is stuffed with flavourful spice with rich gravy. Chicken curry in Andhra has various versions, like in coastal regions it’s cooked with ground coconut or coconut milk to give the chicken a juicy taste. Process:
Heat a pan with oil, add a bay leaf, green cardamom, cloves and cinnamon to the oil. Let them simmer in the oil and infuse the aroma, in order to fry them. Now add onions and saute them till they turn golden brown and then add the ginger-garlic paste. Add the chicken pieces and saute them till they begin to change colour. Now add the turmeric powder and salt to taste. Add some water to allow the chicken to cook. Next, toss in the green chillies and curry leaves to the pan. Let the curry simmer and add the red chilli powder, cashews, poppy seed paste, chicken masala, kasoori methi, garam masala and dhaniya powder to add flavour to your chicken. Add more water, if required, mix well and let the curry simmer till the chicken is fully cooked. Finally garnish with coriander leaves and serve with steamed rice to enjoy the real taste of Andhra Style Chicken Curry.
3.Hyderabadi Dum ka Murgh
Hyderabadi chicken is indeed a royal treat with extensive use of rich spices, herbs and nuts like cashews, cinnamon and cloves. Whole chicken marinated leisurely with spices along with the cashews, chironji and fried onions. This is made in a slow-cook process i.e. in ‘dum’ style for perfection. As it is slow cooked, all the flavours and aroma of the spices will add to the chicken and give you a delicious feel while having a bite of it. Serve this dish with rice for a meal which gives you a heavenly taste.
Process:
Add cashews and chironji in a mixer to grind them dry. Make a fine powder and set it aside. Then grind cumin and coriander seeds and make a fine powder with them and keep it aside. Now take a large pan, add chicken and all the ingredients that we have ground earlier. Mix well and leave the chicken in the pan for at least 2 to 4 hours to marinate. After 4 hours, cook the chicken for at least 35 to 40 minutes, take the lid off the pan and seal it with atta dough and put the pan on medium heat. After 40 minutes, turn off the stove and leave the chicken for 10 minutes, but do not open the lid. After 10 minutes open the lid and your chicken is ready. It goes well with the rice or any other Indian breads like – Chapathi, Naan, etc.
4.Tandoori Chicken
Tandoori Chicken is a well-known dish all around. It’s one among the foremost popular chicken appetizers that stole the hearts of many across the globe and originated from Mughlai cuisine. This recipe will surely give you a soft, juicy, flavourful grilled chicken bursting with flavours in every bite.
Process:
Marinate the chicken with yogurt, ginger-garlic paste, garam masala, salt, pepper & coriander powder & let it sit for 2-3 hours. In a pan, heat up some oil & place in the chicken, regulate the heat to medium. After 3-4 minutes flip the chicken, smear the marinade. Repeat this every 3-4 minutes & cook on both sides until soft and tender. If it is too dry, smear a little bit of soft butter. Burn some charcoal & drop it in a cup; immediately pour 1-2 tsp of ghee & let it smoke. Place the bowl with the cooked chicken & cover it with a lid. Allow it to smoke for 5-7 minutes. Before smoking make sure that the chicken is cooked well. It is cooked when the meat falls off the bone easily. Finally serve the grilled chicken with sliced onions and lemon wedges for a unique tangy taste.
5.BBQ Chicken Biryani
There is something delicious about taking a bite of biryani, add to it a chicken filled with smokey flavours and there is nothing better than that. This biryani recipe involves a delicious combination of fiery BBQ chicken paired with flavourful biryani rice and a few aromatic spices.
Process:
Marinate the chicken with a mix of garam masala, salt, red chilli, turmeric, ginger-garlic paste, yogurt & lemon juice. Mix well and let it sit for a half-hour. Heat a pan, add oil in it and cook the marinated chicken. Once it’s cooked, burn some charcoal, drop it in a cup and immediately pour 1-2 tsp of ghee to smoke the chicken. Cover it with a lid and allow it to smoke for 5-7 minutes. The smoke will be infused with the chicken and give it a bbq flavour. Set the chicken aside. In another utensil, add oil, onion, bay leaves and cardamom and saute till the onions turn golden brown. Add the chillies, tomatoes, ginger-garlic paste, turmeric, red chilli powder and garam masala. After cooking them for some time, add yoghurt & mix well. Add the cooked chicken and stir well. Finally, add coriander and mint leaves. Now mix in yellow colouring to yoghurt, pour within the biryani masala. Mix the masala well in order that everything will combine well and offers you fineness. Place the cooked rice on top of the biryani masala, giving the rice final look with onions. Cover the dish and let it steam for a half-hour and your meal is ready to be feasted on!
6.Chole Chicken
A popular north-Indian pairing is chole with parathas.Taking this to the next level is a dish known to few, chole chicken, which as the name suggests is chole and chicken cooked together. This unique dish is amongst the top favourites at most Punjabi dhabas.
Process:
Soak the chana overnight and cook until soft with cardamom, cinnamon, cloves and bay leaf. Take a pan, heat some ghee & fry the chicken in it for 10 mins. In another pan, add the masala, spices and sliced onions. Fry until onions turn pinkish brown, then add ginger-garlic paste to it and cook. Now add tomato, red chilli powder, turmeric and salt as per your taste and cook until it leaves some oil. Now add the fried chicken to the masala, mix well and let it cook. After a while, add cooked chole, slit chilli and pomegranate to the chicken. Cover it with a lid and cook it until properly cooked. After the chicken becomes soft and is completely cooked, take off the lid, add garam masala and coriander and mix. Finally it’s time to serve hot with paratha, tandoori roti or rice.
7.Chicken Paratha
Chicken Paratha is a delicious combination of chicken filled in paratha. This is all that you simply need for anything like breakfast, lunch or dinner. It is also high in protein and the chicken keema is flavoured with aromatic spices. You are sure to feel the kick in the first bite. Pair it up with achar or chatni for a more tangy taste!
Process:
Take the tiny piece of chicken and marinate the chicken altogether with the spices and ingredients for half-hour. Cook the marinated chicken, then shred the cooked chicken and let it cool down. Now add in the chopped onions, chilli and coriander to the shredded chicken. Finally your chicken is ready for stuffing. In a bowl, sieve wheat flour and refined flour together. Add salt and water in required amounts and knead your dough till it forms the shape of a ball. Apply oil on the dough ball and let it sit for 15 min. Divide the dough into smaller balls, roll two dough balls into a round paratha, add the chicken stuffing on one amongst the raw parathas.
