For the frosting, you will need
- 1/4 cup all-purpose flour
- 1/3 cup packed brown sugar

Procedure:
Combine the flour, brown sugar, butter and cinnamon in a bowl and & spread it into an ungreased baking pan. Bake it at 400° for 6-8 minutes or until it turns golden brown. Add lemon juice to the apples for a tangy flavour. Mix the sugar, flour & cinnamon in a bowl & toss in the apples. Place the apples in the pie shell & cut a piece of aluminium foil, enough to cover the apples but not the edge of pastry. Place it over the pie & bake it at 425° for 10 minutes. Reduce the temperature to 375° & let bake for another 35 minutes or until the apples become soft.
At the same time, melt the caramel with the evaporated milk on low heat & stir frequently until mixed. Get the pie out of the oven & remove the foil on the pie to pour the caramel mixture over the apples. Sprinkle it with your desired toppings & send it back in the oven for 5 minutes. - 400g biscuits
- 140g unsalted butter
- 800g chopped carrots
- 1 vanilla bean
- 100g finely chopped white chocolate
- 1 tsp ground ginger
- 1 egg + 2 egg yolks
- 200g brown sugar
- 250g sour cream
- Ice cream
- Vanilla ice cream
- 1 cup ginger
Procedure:
Add the biscuits to a blender & mix them into fine crumbs. Melt 90g butter, then add it to the crumbs and mix again to combine. Press the mixture into the base and sides of a tart pan and let it chill. Preheat the oven to 200°C. Place the carrots on a lined baking tray with the vanilla pod and seeds and the remaining butter. Toss to combine. Roast the carrots until tender. Place the hot carrot mixture in a food processor and whiz until finely chopped. Add chocolate and mix until the chocolate is melted and combined. Add the ground ginger, egg, egg yolk, brown sugar and sour cream and mix until a smooth mixture is obtained. Meanwhile, reduce the oven to 180°C & place the tart pan on a baking tray and bake for 10 minutes. Reduce the oven temperature to 160°C, pour the carrot mixture into the pie shell and bake for 1 hour 15 minutes. Let it cool to room temperature & then let it chill for 3 hours or until cold. For the ginger ice cream, fold crystallised ginger into the ice-cream & place it in a container. Freeze it for 4 hours & the carrot pie is ready to be served with the yummy ginger ice cream.
7.Fruit Mince Pie
A fresh dessert filled with delicious fruits is all you need to awaken your taste buds. For this recipe, you will need:
- 1-1/2 cups (225g) plain flour
- 2 tablespoons Icing sugar
- 2 tablespoons custard powder
- 100g chilled unsalted butter
- 1 egg yolk
- Fresh chopped fruits
- 2 tablespoons orange liqueur
- 1/3 cup finely chopped figs
- 1 tablespoon orange zest
Procedure:
In a food processor, pulse the flour, icing sugar and custard powder to remove any lumps. Add the butter mix again. Using a fork, whisk the egg yolk with 2 tablespoons of chilled water, then add it to the food processor and mix until the pastry comes together in a ball. Turn the pastry out onto a lightly floured surface and knead the pastry briefly to bring together. Flatten it into a disc, then enclose it in plastic wrap and chill for 30 minutes. Meanwhile, preheat the oven to 180°C and grease the muffin pans. Combine fruit mince, liqueur, figs and orange zest in a bowl, then set aside. Roll out pastry and use a round cutter to cut out the pastry rounds. Use it to line the muffin pans, then chill while you make the lids. Bring together all of the pastry trimmings and re-roll until 5mm thick. Use a 5cm round cutter to cut out 18 lids. Divide fruit mince mixture among pastry cases. Brush one side of the pastry lid with a little water and place it with the damp-side down, on top of the pies. Gently press edges to seal. Make a small cut in the top of each one with a knife to allow steam to escape. Bake it for 20-25 minutes until golden. Let it cool slightly before removing from the pans. For the Grand Marnier butter, beat butter until pale using electric beaters, then beat in sugar until light and fluffy. Reduce the speed to low & gradually beat in liqueur and zest. Dust the pies with icing sugar and serve warm with the Grand Marnier butter.
8.Banana Cream Pie
This is an American classic dessert that is sweet, buttery and creamy – in other words, you should definitely try it out for a once-in-a-lifetime experience. To get started, you will need
- 3 sheets of shortcrust pastry
- 300ml milk
- 3/4 cup caster sugar
- 7 egg yolks + 2 egg whites
- 1 tsp vanilla extract
- 1 tbsp cornflour
- 2 large ripe banana
Procedure:
Grease a jumbo muffin pan. Using a round cutter (or a cereal bowl), cut out 6 discs of pastry and line the muffin holes, pressing into the sides, then trimming to fit. Prick the base with a fork. Chill for 30 minutes. Preheat the oven to 170°C. Line the tarts with baking paper, fill it with pastry weights and bake for 15 minutes. Remove paper and weights, then cook for 5 more minutes until the pastry is lightly golden and dry. Set it aside for 15 minutes, then remove and cool them on a wire rack. Meanwhile, combine milk and 1 1/2 tbsp sugar in a pan over medium heat. Bring it to just below the boiling point. Beat the egg yolks and 1 1/2 tbsp sugar and vanilla in a bowl until it turns thick and pale. Whisk in the corn flour until smooth, then slowly add in hot milk. Transfer to a bowl, cover the surface closely with plastic wrap, then let it chill for at least 1 hour. Place the egg whites in a heatproof bowl & set it over a pan of simmering water and whisk for 2-3 minutes until it becomes frothy. Slowly rain in the remaining 1/2 cup (110g) sugar, beating continuously for 5-8 minutes until thick and shiny. Remove it from the heat and beat it for 5 minutes, until cool and stiff. Place a few slices of banana at the base of each pastry case, slightly overlapping. Fill it with custard to just below the top. Dollop or pipe each pie with a generous amount of meringue & make sure the edges are sealed.
