How To Stabilise Whipped Cream?
Stabilising Whipped Cream with Starch – for Cornstarch, Confectioners’ Sugar, Milk Powder and Pudding Mix.
- Chill the bowl and the whisk attachment for 7 to 10 mins. This is optional. But this is a great way to speed up the whipping process.
- Start whipping the heavy cream using the chilled bowl and whisk attachment.
- After 30 seconds of whipping the cream, now gradually add in the sugar or cornstarch or milk powder or pudding mix and whip for another minute until fluffy whipped cream. Use only the required amount of ingredients.
- Give the final touch by adding in the vanilla extract or other flavourings as per your taste and combine well. Your whipped cream is stabilised. But remember that over-whipping cream will result in the separation of buttermilk and butter.
Stabilising Whipped Cream with Gelatin
This might be a bit tricky but still relatively simple. First, start preparing the Gelatin.
Prepare Gelatin:
- Place the gelatin and water in a bowl and leave for two minutes. The gelatin will bloom and become soft. Don’t skip this step, as it can be grainy.
- Dissolve gelatin in a double boiler until all the gelatin granules are dissolved. But remember not to overheat the gelatin because it might lose its gelling ability.
- Let sit aside but keep warm while you prepare the whipped cream.
Whip the Cream:
- Start whipping the heavy cream using the chilled bowl and whisk attachment, because this is a great way to speed up the whipping process.
- After 30 secs, start gradually adding the sugar and vanilla extract.
- When the cream is soft and has stiff peaks, add a tablespoon of whipped cream to the dissolved gelatin. This is to avoid the cause of small lumps.
- Now, put the whole gelatin mixture into the rest of the whipped cream and continue to whip until it forms peaks.
- Now stabilised whipped cream is ready and you can use it immediately and spread or pipe it over a cake or desserts.
